Why PPE matters in food service
In a professional kitchen, PPE protects two things at once: the people preparing the food and the customers eating it. Gloves, hair restraints and aprons are the barrier against burns, cuts and chemical exposure for staff, and against hair, skin and cross-contamination for food. In the US, the FDA Food Code — adopted by state and local health departments — requires effective hair and beard restraints for food employees and prohibits bare-hand contact with ready-to-eat food, which in practice means single-use gloves or utensils.
